For our Original Homemade egg pasta, we knead the dough according to a traditional recipe involving carefully selected semolina and fresh eggs. This is where the dough is pressed using dies – so-called matrices – specially produced for this purpose. This is how the egg pasta varieties get their shape, characteristically smooth surface and bright, golden colour.
